Smoked Devilled Eggs

Makes: 24 individual eggs

Ingredients

12 large eggs

4 strips bacon, chopped

2 tablespoons tomatoes, seeded and chopped

3-4 oz. Growing Season Chipotle Kick Dressing

½ teaspoon smoked paprika

Salt and black pepper to taste

Instructions

  1. Boil the eggs for 12-15 minutes until hard. Let cool and peel to remove the shell.

  2. Add the bacon to a pan over medium heat. Cook for 3 minutes per side, until crisp. Remove bacon from the pan and set aside to drain on a double layer of paper towel.

  3. Slice the eggs in half lengthwise. Remove the yolks from each egg half and add them to a mixing bowl. Place the empty egg white halves round side down.

  4. Mash the yolks with a fork and then add the Chipotle Kick. Stir well to blend.

  5. Chop or crumble the bacon and add half to the yolk mixture. Then add 1 tablespoon of the tomatoes, and mix until everything is evenly blended. Season to taste with paprika, salt and pepper.

  6. Using a spoon, divide the yolk mixture into the rounded parts of the egg white halves.

  7. Garnish with the remaining bacon and tomatoes as desired.

  8. Serve and enjoy!
