Anti-Pasta Salad

Makes: 6 servings

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Ingredients

  • 3 cups Bow-tie (farfalle) pasta, uncooked

  • 1 cup frozen peas

  • 1 cup zucchini, diced

  •  ¼ cup red onion, diced

  •  ⅓ cup fresh basil, chopped and shredded

  • ¾ cup Asiago cheese, grated

  •  3-4 oz. Lemon Bite Growing Season Dressing

  • Salt and black pepper to taste

Instructions

  1.  Cook the pasta in a pot of boiling water as directed on the package. For the last 3 minutes, add the peas to the boiling water. Drain and rinse with cold water. Set aside.

  2. Transfer the cooled pasta and peas to a larger bowl along with the diced zucchini, diced onion, basil, and grated Asiago cheese. Stir well.

  3. Add the Lemon Bite and mix until everything is well combined.

  4.  Garnish with salt and pepper, or any remaining basil and cheese. 

  5. Serve and enjoy!

**Note: You may also store covered in the refrigerator for 2-3 hours so flavors can blend**
